Free Wine Tasting with GUM and DJ Cooper Cooper (Boorloo)

Join us on April 24th from 4–6pm for a tasting with George from GUM — back for his third visit, and this time we’re also celebrating the launch of his window display in the bottleshop.
George McCullough jumped from sommelier to winemaker after years working the floor at some of Melbourne’s top spots like Grossi Florentino, Coda, Tonka and King & Godfree. After curating everyone else’s wine for so long, he decided it was time to make his own — and Gum Wine was born in 2022.
His approach is all about making fresh, savoury wines that shine with food, drawing on everything he learned in hospitality about balance, texture, and how wine fits at the table. The wines are centred around a vineyard he manages in the Cathedral Range (Yarra Valley), alongside fruit from Heathcote and Macedon, and are bottled unfined and unfiltered.
That Cathedral Range site is something special — a 40-year-old vineyard that George stepped in to save, now shaping the style of his wines with its cool climate, long ripening, and naturally bright acidity.
Expect thoughtful, expressive wines with plenty of character, plus a few great stories from someone who’s seen both sides of the glass.
To top it off, the afternoon will feature an exclusive DJ set from Cooper Cooper (Boorloo) — setting the tone while you taste your way through the lineup.
